Wanchese Shrimp Quesadillas :) Caught Um, Cleaned Um, Cooked Um, Ate Um.

Mmmmm, fresh shrimpiesss! ๐Ÿ™‚ Sooo good and ya know what? You can cook them in a about a million different ways! Whenever someone asks us what our favorites seafood meals are….something is always to be said with shrimp! These shrimp quesadillas, shrimp tacos, steamed shrimp, fried shrimp, shrimp n’ grits, shrimp ceviche, a shrimp boil, shrimp po’boy, shrimp pasta, coconut shrimp and MORE! The list goes on and we just LOVE it…can’t get enough of it (I want some more of it….okay I’ll stop ๐Ÿ™‚ ) The best part about it is we get to catch um ourselves right in the backyard ๐Ÿ™‚ spoiled…we know!

Shrimp Quesadillas ๐Ÿ™‚

We couldn’t wait to share this recipe with y’all!  I know I say this a lot….but this is EASY PEASY!  And everybody loves some mexican cuisine…..hint hint, margarita pairs well too ๐Ÿ™‚  Shrimp Quesadillas are one of our favorites and probably because Mrs. Katherine has always been making the yummiest ones for Mack since he can remember!  So anytime we get fresh bugs aka SHRIMP….we chef these up in the kitchen!  Ya don’t have to make it look all fancy with your avocado, salsa dishes, and cut limes…but hey, we keep it fun round here ๐Ÿ™‚

All you’ll need is some Fresh Shrimp, lotsa cheese, whatever ya want inside like peppers, onions, black beans, etc and then your tortilla shells! How we like to do it is sautรฉ up your peppers and onions together, drain and rinse your black beans, and then sautรฉ your shrimp separate with your favorite seasonings. We do a little salt, pepper, garlic and magic blackening seasonings. Once everything is all cooked up separately…it’s time to build your quesadillas! We lay one big tortilla in a big pan and then add some cheese, cooked peppers and onions, black beans, and shrimp and then more cheese to one half of your tortilla and then close it up! We like to use one big tortilla shell and fill half of it and just flip the other half over to make the top. We feel like making them like these keeps all ya good stuff inside a little better than making one huge one where the sides are all open, ya feel me?

Then once its all cooked up, it’s browning and cheese is melted, its done ๐Ÿ™‚ We will cook a few more than we want to eat because they are great leftover too! We love adding some sour cream, cilantro, avocado, salsa to ours too! I can’t eat mexican style food without lots and lots of avocado! I just love it!
