Macadamia Nut Crusted Tile Fish :) Caribbean Style!

 

Yummmmmy 🙂  This Tile Fish was so incredibly delicious!  We cooked it a few different ways throughout the week but I wanted to share this creative and yummy Macadamia Nut Encrusted Tile Fish Recipe with y’all!!  I’ve had nut crusted fish before but never tackled creating our own in the kitchen and it was a lot easier than you’d imagine and super goooood!!  Here is how we did it!

 

 

We first seasoned the tile fish with salt and pepper and then dredged in coconut flour, egg, and then into our crushed macadamia nuts mixed with panko bread crumbs.  We used coconut flour to have a little bit more tropical sweet flavor to the fish but you can use other flour too.  Then in a large cast iron skillet, over medium heat with olive oil or butter, we cooked each filet for about 3-4 minutes on each side until its nice and golden brown and then flipped them and did the same on the other side 🙂  We also had pretty thick tile fish filets so we put the entire cast iron skillet with the fish in it into the oven to let the fish cook for a few more minutes after both sides have gotten golden and crispy!  This just makes sure that your fish is cooked through and not just cooked on the outsides of your nut crust.

To go along with the caribbean style of sweet and tangy…..we also created a fresh cabbage slaw with purple cabbage, corn salsa, black beans, avocado, cilantro, s&p and garlic 🙂  Oh yea!  AND, grilled Pineapple 🙂 YUM!!  This slaw was something we will be making a lot in the future too because it holds up well for a lot of other dishes throughout the week like tacos, bowls, and more!  One tip for making a bigger batch of cabbage slaw to have for the week is to not add avocado to the entire slaw but only the portion you will use for that meal.  Add more avocado the next day when you plan to use it again.

We served the Macadamia Nut Crusted Tile Fish with the homemade cabbage slaw, jasmine rice, and roasted asparagus 🙂  And a homemade margarita because…..why not 🙂
