Outer Banks Sushi Rolls 🙂

I’m pretty sure we could live off of Sushi!  The combinations are endless and with fresh fish, you just can’t beat it.  Our favorite roll is always fresh big eye or yellowfin tuna with avocado, cucumber, red pepper, green onion, sriracha, and a little sprinkle of panko inside the roll.  We have made your tradition style sushi rolls with the rice on the outside but to us…its just as good and a lot easier to have the rice and fillings inside your nori sheet 🙂  We will mix it up sometimes by chopping up the tuna into bite size pieces and making a “spicy tuna” mix but a lot of the times we just cut strips of fresh tuna and add in our other favorite fillings and Rollllllll 🙂  We love the crunch and fresh taste from the cucumber and red pepper and the creaminess of the avocado!  Sometimes we will put little strips of cream cheese in the rolls too but not very much because we like the healthy fat and taste of good slices of avocado.

Rolling your own sushi can seem intimidating at first but it’s pretty simple and a lot cheaper than going on a sushi date and spending anywhere from $8-$20 dollars on one roll!  Next time, go buy some fresh fish and get creative 🙂  Turn on some music, pour a glass of wine, get your rice cooking, cut up your fillings and get to rollin’!

 

What You’ll Need

Bamboo Rolling Mat

Nori Sheets

Sushi Rice/Jasmine Rice

Fresh Tuna

Avocado, Cucumber, Red Pepper

Green onion, Panko, Cream Cheese

Soy Sauce, Sriracha, Wasabi, Pickled Ginger

Chopsticks

 

 

Summer Rolls (Plant Based)

Now, don’t get me wrong…I LOVE fresh tuna sushi rolls but when we can’t get our hands on some fresh fish or if I just feel like whipping up some extra healthy sushi rolls, I will make a “summer roll.”  I call them summer rolls because I tend to roll these up more in the summer with loads of fresh fruits and vegetables.  To me, anything goes!  I love buying different greens or fruits that are in season throughout the year and making different roll combinations.  Fresh mango, red cabbage, avocado, cucumber, roasted sweet potato, greens and more!  I also have a cashew cream sauce that I will whip up sometimes and put it in the rolls and its so delicious!  Just get creative, cook your rice, and then add in whatever seems tasty.  I love all the colors and freshness from these rolls 🙂  Most people wouldn’t think they would want a roll without fish….unless they tried some of these 🙂
