Peanut Butter Cups – Homemade & Healthier

Reese Peanut Butter Cups, who doesn’t love them? Yummyyyyy 😀 For as long as I can remember, I’ve had had these little guys stored in my freezer for a tiny treat every now and again.  But the truth is….there’s a lot of unnecessary ingredients in these tasty little cups. The two ingredients that it takes to easily homemake your own is pretty obvious, peanut butter and chocolate.  Who woulda thought?  Next time you are in the grocery store, take a peek at the ingredients list of your candies.

Last week I planned to make my own and man, they turned out AMAZING.  And the best part is, it’s extremely EASY.  I mean easy.  I made 16 and then just threw them in the freezer to save for when a sweet tooth arrives ☺️  All it takes is creating a double boiler and putting some chocolate in a pyrex bowl above the pot of boiling water.  Believe it or not, this recipe of using milk chocolate can easily be converted to a vegan dessert by using vegan chocolate chips.  My favorite brand of vegan chocolate chips are either Enjoy Life or Trader Joes.

Let’s get back to the recipe, shall we.  Pull out your muffin tin and fill it with cupcake liners and once your chocolate has melted then fill them with a teaspoon of the chocolate for creating your bottom layer.  Let that first bottom layer of chocolate set in the fridge for about 10-12 minutes, then take it back out and put a teaspoon of peanut butter OR almond butter on top.  Almond butter is an excellent alternative for peanut butter due to its higher vitamin and mineral content of Vitamin E, Magnesium and Iron.  I made some with Peanut Butter for a more traditional feel and some with Almond butter, because it’s my favorite ?  After you finish topping each cup with almond butter/peanut butter, put it back in the fridge for 10-15 minutes to set.  After patiently waiting again, take them back out and apply your final 2 teaspoons of chocolate and then finally let them set in the fridge for another 20 minutes and WaaaaLaaaa !  You have a “healthier” version of “peanut” butter cups.

You can could crazy with this recipe by adding some shredded coconut, strawberry jelly filling, Himalayan sea salt, etc.  Have some fun in your kitchen with this one!
