Stripers AKA Rockfish :) Blackened & Fried!

Y’all….I LOVE Rockfish. Seriously, it’s one of my favorite fish in the world to eat! It’s so juicy and has the perfect amount of flaky yet meaty texture making it super versatile for cooking! Our favorite ways to eat it lately have been baked in the oven with lemon, olive oil and your blackening seasonings and then of course cut up into bite size chunks and fried with a cilantro lime cream sauce for dipping….MMMM πŸ™‚

One of the greatest rewards to me about fishing is being able to cook what you catch! It feel so authentic to me that we are able to go out and target a species of fish, catch it, clean it, cook it, and eat it. Makes ya appreciate life πŸ™‚ At least for me it does! Fishing to me is a lot more than just actually catching a fish….It’s the entire experience! We caught SO many rockfish by the bridge this year and every time ya’d hook one…it was even more exciting! HOOKED UP! πŸ™‚

Honestly, most of my recipes are super SIMPLE but always so full of delicious flavors! I love making some type of starchy carbohydrate like rice, potatoes, couscous or pasta and then adding a bean or legume (black beans, roasted chickpeas, lentils) plus something green like broccoli, asparagus, brussels, spinach, okra, kale…etc and then your MEAT. Most of the time…that’s fish for us πŸ™‚ We switch things up by adding different herbs, spices, cheeses or sauces but ya can’t beat cheap, easy and delicious in my opinion. And fresh caught fish, of course!

It might look kinda fancy but it’s simple and easy! I’m gonna keep it real with y’all on our meals and show ya exactly how we typically cook and serve our dishes. I love cooking and I especially love serving friends and family and coming up with new ideas for recipes! Anyone that knows me well….knows that I am always whipping up something in the kitchen. We ain’t going hungry round here! And we’re definitely always catching fish πŸ™‚

Blackened Rockfish

  • Olive Oil
  • Lemon Juice
  • Salt n Pepper
  • Fresh Garlic or Garlic Powder
  • Your favorite Blackening Seasoning
  • Little extra pinches of paprika
  • Sprinkles of dried thyme (optional)

Cilantro Lime Cream Sauce

  • Sour Cream
  • Lime Juice & Lime Zest
  • Cilantro
  • Salt n Pepper
  • Garlic Powder
